Coconut Prawns for your barbecue

INGREDIENTS:
24 large raw prawns, peeled
1/2 cup plain flour
2 eggs slightly beaten
3 cups shredded coconut
24 - 6 inch wooden skewers

How to prepare:

Insert one skewer in each prawn leaving 2-3 inches of the skewer protruding..
toss the prawn in flour, then in beaten eggs. Roll the prawn through shredded coconut, covering them thoroughly.

Deep fry prawns at about 375 F, until they are brown.

How to serve:

Serve with pink cocktail sauce to which crushed pineapple has been added. Experiment with the amount of pineapple to suit your own taste.
