Barbecued Honeyed Pineapple

INGREDIENTS FOR THE GLAZE:
3/4 cup fresh orange juice
1 tablespoon rosemary honey
1 tablespoon lime juice
2 teaspoons cornflour
4 slices fresh pineapple
1 teaspoon cushed green peppercorns
4 scoops vanilla ice cream

How to prepare the glaze:

To make the glaze:Place all of the the glaze ingredients into a small saucepan and whisk until smooth. Bring slowly to a boil over a medium heat and cook until thickened, this will take about 1 to 2 minutes. Reheat when ready to serve.

TO PREPARE THE PINEAPPLE:

Lightly season both sides of the pineapple slices with the crushed peppercorns. Place on hot grill wires on the barbecue over medium heat until well marked, 6 to 8 minutes. Turn once during the cooking time.

How to serve:

Serve each pineapple slice with a scoop of ice cream and some of the glaze drizzled over the top.
