INGREDIENTS FOR THE MARINADE:
1/2 cup chopped fresh coriander
1/4 cup pure vegetable oil
1/4 cup finely sliced onions
3 tablespoons lime juice
1 tablespoon fish sauce
1 tablespoon brown sugar
2 teaspoons grated garlic
2 teaspoons grated ginger
1 teaspoon hot bean paste
1/2 teaspoon salt
6 chicken legs (whole)
oil for brushing chicken
How to prepare:
Combine all marinade ingredients. Place chicken legs in a shallow dish. Pour marinade mixture over chicken; cover the dish and marinate in refrigerator 2 to 4 hours, turning occasionally.
Brush the chicken legs with oil and place on the barbecue. Cook for 30 minutes or until juices run clear, turn regularly during the cooking.
How to serve:
Serve on a dish with fresh watercress
